Good afternoon, blogland! The lack of a morning post was due to oversleeping on my part… whoopsies! I had a hard time falling asleep last night so those extra minutes in the morning really made a difference, despite the mad-dash to class this morning.
The fridge is starting to look pretty sparse, but I still managed to have a delicious bowl of oatmeal.
- 1/2 cup oats
- 1/2 cup soy milk
- 1 small banana
- mixed frozen berries
- cashews & hazelnuts
- 1 tsp peanut butter
I’d planned on eating in the cafeteria for lunch, but it my morning rush I didn’t have time to pack the books needed for afternoon classes and, more importantly, I forgot my camera! So I came home and had another one of my weird-but-tasty sandwich combos. This was made of egg whites, a Sargento light cheese stick, hummus, and Tofurky on Lavash bread, warmed to gooey perfection on the skillet. I dipped it in a mixture of peach salsa/tomato basil pasta sauce… very yummy!

For dessert, I had one of my Valentine’s Day truffles. I think this flavor (Raspberry) might be my favorite. If you haven’t tried 99% dark chocolate, get right on it… it’s outta this world, baby.
