Excuse me, Officer

I was halfway to school before I realized that there was a white envelope wedged under the wipers on my windshield… yep, I got a ticket.  Apparently I parked a wee bit too close to the crosswalk. Whoops! The only other time I’ve gotten a ticket was when I was parked right across the street from my own house for street -cleaning or something. A lot of us seem to be having car trouble lately!

I had early class this morning, so I just went to the cafeteria afterwards.  I made a big salad with mixed greens, carrots, cucumbers, beets, and some kind of grainy salad. I also got two big slices of tofu, which I added chili sauce to.

Something was up with the salad-part of my meal… I hate wasting food, but it just wasn’t tasting right.  I ate about half, then just plopped the tofu into this curried tomato soup with some coconut, peanuts and parsley.

I had a grapefruit, heart-shaped chocolate and coffee with skim while reading the paper.

I did the unthinkable and had a Sugar Free Redbull during my poetry class… I didn’t want to feel sluggish during Step so I needed a quick fix.  I also had half of a Balance Bare bar (and ate the other half after my workout).

I forgot my HRM today, which is too bad because Step was great today! We learned a lot of new moves, and although it was really challenging, I didn’t take a single break that the instructor didn’t call for.  After class, I ran a quick mile (@ 5.4 mph, then @ 6.2 mph for the last .15 mile).  I was one sweaty sister, as you can imagine!

When I got home, my prize form Meg’s contest was waiting for me!  Every single recipe looks DIVINE.  Here are some ideas of what you’ll be seeing in the near future: Sesame Soy Squares, Alfredo Sauce (healthy Alfredo!!!), Vegan Gumbo, Mock Chicken Salad (like the stuff at WF I’m in love with), Fruit Quick Bread, Thai Coconut Curry (!)… Holy Yum, as Miss Veggie Girl would say!

I got home from school completely exhausted.  I try to avoid spending the entire day on campus, but today I couldn’t help it.  The idea of cholent & polenta again did not strike my fancy, so instead I had a simpler meal.

Small side salad of spinach, diced tomatoes, onion, chili flakes, and Annie’s Light Honey Mustard dressing:

I followed Sarah’s lead and made Annie’s mac & cheese with salmon instead of tuna.

This was my first time using canned (well, pouch-ed) salmon, and it was really good! I also bought regular instead of white cheddar packets.  I don’t know, there’s something about the orange cheez color that brings back very happy memories.  The first Christmas I was vegetarian for, in 8th grade, I told my dad I didn’t want  him to make me a nice meat substitute. Instead, I wanted Kraft Macaroni and Cheese Deluxe. Yep, that’s the kind where the cheese is already in a semi-solid, semi-liquid form and you just squeeze it onto the noodles. And that’s what I had on Christmas Day.  Yes sirreebob.

To keep the color theme, I also had a “Pink” navel orange.

Dessert was another Skinny Cow ice cream sandwich with almond butter… but this was my last one! Boohoo.

So, now I’m just enjoying my ice cream while watching my favorite episode of The Office reading over my notes.  I have a big presentation tomorrow during my night class, but a few hours (like, 5 am!) after that’s over I’ll be heading home for the weekend!  This could not be better timing, because I am POOPED.

On another happy note: my friend Katie just got engaged!!! How exciting is that?! I can’t wait to hear about all the planning that goes into it… and she and her fiancé are both photographers, so you know there’s going to be some gorgeous documentation. Woohoo!
