Day Two

Good evening! How are you all this beautiful Friday evening? I for one could not be happier about being in bed and under the covers at 11:30 on a Friday night, away from the blustery cold and a long day.  I’m a little too comfortable… I’ll be very proud of myself if I make it through this whole post without nodding off!

We ended up making rich mugs of hot chocolate last night before we went to sleep (I’m not sure there’s a more perfect nightcap on the market) using Jacques Torres’ hot chocolate.

The chocolate was very thick and filling, almost like a pudding.  I topped mine with marshmallows and cinnamon.

It knocked me right out, and I fell asleep almost immediately.   Although I’ve been getting less rest than usual this past week, I bounded out of bed as soon as my alarm went off.  Must be the pre-work jitters!

I made another rich breakfast, hoping it would hold me well into the morning: 5 grain cereal with ground flax, cinnamon, 1 small banana, warmed frozen berries, almond butter and agave.

I got to the office right on time, ready to start Day 2 of training.  Did I mention I have my own office? 😀   Around 11:30 my stomach was growling pretty loudly, so I dug around in my purse for a snack.  Unfortunately I was a little distracted last night and didn’t have time to pack a lunch or snacks, but luckily I found a Date Heart Thrive hidden away!

We broke for lunch around 1:30 and I dashed out to grab a salad.  Hopefully I’ll be able to plan better in the future… I can’t spend $11 every day for a mediocre meal!  I had a mixed green salad with marinated mushrooms, tofu, avocado, asparagus, and chili lime vinaigrette.  It was pretty blah.

I needed a little pick-me-up, so I visited the fancy coffee machine in the communal pantry.

We’re running low, but there are so many flavors to choose from! Each cup is brewed “to order”, with the push of a button.  Pretty cool, hmm?

I spent the rest of the day trying to learn as much as possible from my trainer… I’m on my own starting Monday!

After work, I met my Little Redheaded Friend for dinner.  We went to Friend House 2 (I was very sad to discover that the original Friendhouse, one block over, had closed within the last month 😦 ) for Japanese.

For my entrée, I strayed from my usual order (sashimi) and ordered a roll combination instead.  I must have been craving carbs!  By the time I finished my Sweet Potato, California, and Spicy Tuna rolls, I was thoroughly stuffed.

Kalle and I sat and chatted for a little while and let our tums settle before making our way to Whole Foods for dessert.  We’d originally wanted to go to a proper coffee or dessert shop, but it was so cold and windy out that we just decided to take refuge in the supermarket.  I got a “Caramelita bar”, which tastes like a cross between a Hello Dolly/Magic/7 Layer bar and Pecan Pie.

This was as big as it looks, and then some.  I’d broken it in half and had fully planned on saving the rest for later, but we were in the store for almost an hour and I ended up nibbling the whole thing. It was a little too rich for me, but it was still very tasty.

Well, I made it through the post without falling asleep!  I’m watching A Christmas Tale while I wait for Ari to get home, but it’s a pretty long movie my chances of finishing it are slim.  What are your favorite holiday movies?

Back In Time

As of 3 minutes ago, it’s officially Thanksgiving! I’m cozy at home in my bed, surrounded by my stuffed animals, Polaroids from high school, and hundreds of books, among other things. What was your childhood bedroom like?

Speaking of childhood, I got a fun e-mail from my friend Jenny at 8 this morning while I was sipping on my coffee. Jenny is hands-down my oldest friend; our mothers grew up together, and although Jenny and I have been separate by half a country for our entire lives and only get to see each other once a year, we’ve always been close. When my grandfather was still living, my parents and I visited him in Indianapolis every winter between Christmas and New Year’s; this photo is from the winter of 1988. (That’s me on the right, with the bowl cut.)

Here we are this past summer, in Lake Michigan.

I miss her so much during the year. We look forward to our week on the lake so much!

After my trip down memory lane, I made a quick breakfast: Ezekiel English muffin with almond butter and a banana, raspberry jam on one side and pumpkin butter on the other.

I went to the post office to mail something; it didn’t open until 10 (which seems a little later) but there was a machine that got the job done. Then to physical therapy I went! It as a particularly good appointment. I learned some new exercises to stretch my hips; I can easily do them from the hotel room in Russia. After PT I raced back home to eat lunch before I had to turn right back around and go to an interview. I made a quick salad:

It was one of the rare occasions where I could not finish my meal. Usually, once I’ve dished a certain amount of food out, I will eat every last scrap even if I’ve long since reached capacity. (Last night’s pasta plate was an example of this.) However, today I started getting a stomachache about partway through, and just picked out what I wanted (roast vegetables, tofu, hummus), leaving a fair amount of spinach.

I felt guilty about throwing the rest out (I won’t be back at the house for two weeks), but it was better than making myself sick. As it was, my tum hurt for the next two hours. My eyes are bigger than my head sometimes, and I think the most important thing I need to remember to do is slow down while I’m eating. I’ve been so rushed these past few weeks that although I’ve been eating foods I love, I’ve barely tasted them as I’ve had to practically inhale them to get from appointment to appointment on time. It’ll be nice to have a little break 🙂

There’s always room for sweets, though! I had a couple of these strawberry gummy candies from the Japanese grocery store in our neighborhood. Not bad!

I was starving after my interview. Luckily I had about four different snacks in my bag, so I ate one of the apple-flavored Heart Thrive bars that I was sent to review. I’ll do a formal review once I’ve sampled all of the products, but I liked this a lot!

When I got home I folded laundry and did some preparatory packing for my trip to Russia. I am one of the worst packers ever. I always take too much and forget crucial items, like spare contact lenses or pajama pants. Do you have any fool-proof (or LVP proof!) packing tips?

I snacked on some Concord grapes that were about to go bad while I waited for my dad to help me pack some things up. These grapes are really addicting. There are seeds, which I thought I wouldn’t like, but are actually kind of fun to work through and take longer to eat. Plus, these are the kind of grapes used to make grape juice, so they’re the perfect combination of sweet + tart.

While my dad was at a holiday party, my mom and I had dinner at watched Hannah And Her Sisters. Not only is this a really good Woody Allen film, but it’s told between two years’ worth of Thanksgivings! I ordered a bento box for dinner, which came with a spicy tuna roll, tempura, sashimi & shrimp shumai. (It came with rice, salad & miso soup as well, but I’m saving those for tomorrow.)

I also had a glass of Black Box Wine’s Sauvignon Blanc.

My mom brought home dessert from Billy’s Bakery, the same shop she ordered my birthday cupcakes from.

She bought one pumpkin cupcake and one pumpkin bar; we split them three ways. De-lish.

Five Minutes or Less

Hi there! How was your Monday?  Mine was nice… everything is going to be A-OK!  It’s like Shakespeare’s Wheel of Fortune: what goes down must go up again.  I just need a little reminding from time to time, so thanks for coming to the rescue.

On Sunday morning, Josh, Ilana, Ari & I got up and headed over to the diner for brunch.  No such luck! Not only was it packed, but there was a long wait!  Too bad, because I’d finally decided I was ready to have one of their omelets again after having burned out on them a few months ago.  Next time!  Instead, we went to Locale.   I’ve only been there for dinner before, but their menu looked pretty good.

I ordered the Baby Spinach & Goat Cheese Omelet, and asked for it to be made with egg whites and tomatoes as well.  Instead of homefries, I ordered shoe string fries.


I added ketchup, hot sauce, salt & pepper… any and all condiments, please!  In retrospect, I should have gone with a salad instead of the fries.  Since I was little, I’ve never been a huge fan of French fries (except when they’re made with sweet potatoes), and these just didn’t do it for me.  I was more than happy to share, though!

Locale Brunch

After brunch, I attempted my Vegan Chocolate Chip Pumpkin Squares.  Now, I’ve made these about six times in the past year, and Anna even blogged about them! For the second time in a row, they have not turned out.  I don’t know if it’s because I had to use regular whole wheat flour instead of whole wheat pastry flour, or that I used about 1/8 cup vegetable oil with the olive oil, or what. But they were gummy and had a sort of “oatmeal-y” texture, as Ari reported.  Very frustrating, because these are pretty much my go-to treat for Fall!

Brunch filled me up for the rest of the day, but I snacked on an apple with yogurt and cinnamon around 5.  I had to eat it in another room because Ari HATES the smell of yogurt!

I wanted dinner to be easy and nutritious.  I baked one sweet potato and 2/3 of a block of tofu in a little olive oil and Emeril’s Original Essence at 400 for about 30 minutes.

When it was ready, I plopped half of the mixture on top of a spinach/carrot/tomato/red pepper salad with pumpkin-miso dressing.

With half a glass of the end of a bottle of wine, I ate my dinner while catching up on Grey’s.  This is what my “TV rig” looks like when I have to stream old episodes! Pretty classy.

Yesterday morning I woke up determined to change the pattern, get out of my rut and be productive.  I started with a good breakfast.

Really, this is too fast and delicious for you to miss out on.  I made it again this morning!

After breakfast, I packed up my things and took myself to Starbucks.  Goal 1: Get out of the house. Mission: Accomplished!  I got a grande skim misto with a shot of espresso, and was given a free packet of their new Via instant coffee to try out.


I always put all of the different powders (Vanilla, Cinnamon, Nutmeg & Chocolate) in my foam.

A little later, my eyes started to droop despite the caffeine.  I snacked on a Trek Mix bar and woke right back up!

Ari stopped by around 12:30 and we re-located to Panera so he could get lunch.  When his free WiFi expired, he ran some errands and I ate my lunch while keeping him company.  I had leftover baked tofu & sweet potatoes with black beans and red peppers.

These were good! They did, as usual, make me feel like Edward Cullen wouldn’t go anywhere near me, they had so much garlic…. I also always forget that one bag is 1.5 servings, not 1.  Very tricky!

Soon after, I left to accomplish Goal 2: Go to the gym.  I brought a magazine and hammered out 45 minutes (+5 minute cooldown) on the bike, arms and abs. I have physical therapy tomorrow, so I’m not going to work my legs out until the therapist tells me what to do.  The PA at the orthopedist’s office returned my call yesterday; the bone density test results showed I don’t have a problem with osteoporosis or anything like that, so I can rule it out as a cause of my injuries.  We’ll just have to keep looking!

I left the gym and headed over to Starbucks to meet my friend Lisa for tea.  She had Passion, I had Green. (Didn’t end up using the honey.)  Lisa just got hired full time after months of sending out resumés and cover letters, so I have hope!

When I got home, I followed my 5-minute meal plan and based my dinner around Trader Joe’s Lentil Rice Biryani.

I sautéed 1/3 block of tofu in olive oil and Emeril’s Original Essence, and added it to the rice.  I also steamed some green beans. Fast, easy, and just in time for Gossip Girl.

I got a little impatient, which is why it looks a little smoother than it should… I melted Pure Dark chocolate and made a little sauce, and sprinkled cinnamon on as well. Yum!

Making Moves

Shari wanted me to let you know about the correct way to eat what I’ve referred to as “fruit-on-the-bottom” Chobani:

[D]on’t stir…take your spoon straight down through the yogurt and pull some fruit up with the yogurt.  I at first was reluctant…but then I said “oh what the heck…”  I won’t stir my yogurt ever again….  It completely changes the dynamics of the yogurt.

What do you do when you can’t decide what to have for breakfast? Have it all! I threw quite a few ingredients into my bowl.

I warmed some frozen strawberries, sliced up half a banana, grabbed a handful (or two!) of Puffins, and scooped a generous spoonful of almond butter.

The rest of the morning was spent reading in bed in total coziness, taken in the aroma of scented candles.  In the past few days I’ve taken quite a few baths and burned through a lot of candles.  It’s not so great for the environment, but I figure I’m just making up for the baths I didn’t take in the dorm bathrooms in college.  Mid-morning, I snacked on a crisp Macoun apple.

Caitlin came over for lunch, and I heated up some leftover Smoky Greens & Beans.  This time, I added in pieces of seitan.  The physical therapist told me that since I’m going to be trying to build up muscle and heal myself, I’m going to need eat a LOT of protein. Each serving of seitan packs a whopping 18g! This was Caitlin’s first time eating it, and I think it was a hit! We ate the stew with warmed up pieces of lavash.

After lunch, we headed to Starbucks to get coffee and read. I couldn’t remember exactly what went into a dirty hippie… where was Luke when I needed him?!  I ended up just getting a Double Grande Skim Chai.  There’s always next time!

We ended up doing more talking than studying, but it was needed! I hadn’t seen this girl in three weeks.  When I got home, I started dinner by peeling and cubing a sweet potato.  I covered the cubes in a little olive oil, salt & pepper, an baked it at 400.  About 20 minutes into the baking time, I added pressed and cubed tofu to the mix, making sure to coat the pieces in the extra oil mixture that covered the bottom of the baking dish.  10 minutes later I removed the sweet potato, and baked the tofu for 15 minutes longer.

I added the sweet potato and tofu to a bed of spinach with a white heirloom tomato, pomegranate seeds, and a little gorgonzola cheese.  Aren’t the colors lovely?

Using pear-infused vinegar, pomegranate molasses, olive oil, sea salt & pepper, I whipped up a light dressing.

This was one of the best salads I’ve had in a long time, and felt perfect for a chilly Fall night.

After dinner, I went downtown to meet Lauryn for frozen yogurt at Red Mango.   She moved to Manhattan over a month ago, but we seem to be operating under completely opposite schedules and this is the first day it worked out.   I’m so glad it did!


We both ended up ordering the pumpkin frozen yogurt (tart and creamy, and perfect for Fall!) even though it was fuh-REEZING out and were were sitting right in front of the door.  It came with free graham cracker topping, too! I’ve never been one to turn down a freebie…

We ended up talking non-stop for three hours, and literally closed the Red Mango down.  Couldn’t have asked for a better Saturday night!  I ended up getting home after 1, by which point I was already hungry again and ate a giant apple.  I didn’t go to bed until after 2… I need to find a job ASAP because this rando schedule just ain’t doing it for me.

Well, I’m off to go meet my little red-headed friend for dinner.  Hope you’re having a great night!

Short Fuse

For some reason, this post didn’t go up this morning when I pressed “Publish”! Sorry about that, folks 🙂

Just now, as I made my breakfast, I’d almost convinced myself I was in a Parisian flat getting ready for the day with the rest of the rest of the workforce. It’s a crisp day out, but the windows are open, letting the fresh air (and an upstairs neighbor’s cigarette smoke) waft in. It’s about 2 there right now… my parents are probably having a simple lunch somewhere, and Ari is getting ready for his show tonight in Manchester. I haven’t really heard from my parents (except a frantic back-and-forth with my dad about physical therapy), but it seems like the Upwelling‘s tour is off to a great start!

Yesterday morning I played a fierce game of “snooze” with the alarm clock. You might be wondering why I even bother setting alarm given that I don’t have a job, but I find that I really need to keep myself on a remotely “normal” schedule so that things get done and I don’t lose my mind.

I cooked 1/3 cup of 5-Grain Cereal in 2/3 cup of water, then microwaved a diced apple with cinnamon and a little brown sugar. (Blew the fuse with this one… the dishwasher and dryer was already running in the kitchen, and the vacuum was in use in another room. Whoops! But a girl’s gotta have her breakfast 🙂 ) I topped everything with 1/4 banana and a big scoop of peanut butter.

I haven’t had any hot cereal other than oats since I graduated, but I’m going to keep this up. It’s a nice change!

My knee was feeling a little better when I woke up, so I decided to go to the gym and see how using the bike felt. Well… not so great. It hurt to go faster than a snail, but the slow pace was really frustrating. I ended up getting off after 20 minutes, hobbling over to the machines to try arms, getting even more frustrated, and leaving. The combination of an over- crowded locker room and no hot water in the showers led to a minor meltdown… there were a few tears as I stood under the shower head, freezing and wondering if this was the end of my running career. Then I moved on with my life.

My friend Hannah and I met at Whole Foods for lunch, and I loaded my box with some of my favorite comfort foods.

After lunch I went home and made some calls to physical therapists, trying to get an appointment.  No luck!  So, I decided to relax a little and settled into bed with a book, a cup of chai, and an apple with cinnamon.  Very cozy!

Speaking of ice cream, remember the almond-less Vanilla Swiss Almond? Well, I finally got around to calling Haagen-Dazs, and they were very nice about the mix-up and should have a coupon in the mail.  All’s well that ends well!

Girl’s Night at Quantum Leap

Hey there, and happy weekend!  Life has gotten in the way, yet again, of my regular posting schedule.  I think once I’m settled in a routine it’ll get back to normal, but until then, I’ve just got to learn to be flexible and go with the flow.  I’ve got a great giveaway in store for you to supplement your already fabulous days, so keep reading!

Yesterday I was in the mood for something a little different for breakfast, so I made a HUGE cereal bowl… the picture doesn’t do the size justice, so trust me on this one! I mixed Kashi GoLean, some kind of raisin bran, and granola, topped it all with banana, and added a generous portion of skim milk.

I had an errand to run in the city, and took the most roundabout route getting there.  I rode four trains, when I’m pretty sure I would have been fine on two! It’s a little embarrassing that I’ve lived here my entire life and still have the worst sense of direction and navigation. I packed my lunch to go (salad with romaine, carrots, broccoli, Morningstar Farms Black Bean Burger & TJ’s three-layer hummus).

Again, I found myself close to the gym with my heavy gym bag, but all I wanted to do was go home and take a nap.  So that is just what I did.  When I woke up, I snacked on a Ginger Snap Larabar, said hi to this guy…

…before heading into the city to meet some lovely blogettes at Quantum Leap.  I was a little late when I got there, but immediately felt right at home with Missy, Elise, Marina, Ada, Olga, and Megan and had a great time chatting with everyone.  Ada and I ordered the same Tofu & Veggie Salad:

This came with marinated vegetables, grilled tofu, bean salad & tahini cole slaw, with balsamic and carrot-miso dressing on the side.

To be perfectly honest, this salad just didn’t do it for me.  There were only three small pieces of tofu, and I didn’t find the vegetables to be particularly flavorful.  Strangely, it filled me up pretty fast and I only ate about half of the salad.  Everyone else’s food looked pretty good, though, so I do want to go back to Quantum Leap to try out some other things.

Poor Ellie organized the whole event and ended up hurting her back and hip and spending the day in the ER!  She was greatly missed.

Most of the girls went out for ice cream afterward, but I left to meet Ari and go to a housewarming party in Williamsburg.  We didn’t stay very long (“We just want to warm the house, not make it too toasty,” said Ari) and I had about half of a vodka-soda.  When we got home, we dug into the brownies from Liz.  I had one Cookies & Cream brownie and half of a Chocolate one.

I also had a sip of wine, but I wasn’t feeling the alcohol… I really just wanted to go to sleep! Yes, I’m turning into a bit of a ninny, but so be it 😀  I took the day off from exercising yesterday and haven’t done anything physical yet today (other than cleaning).  When I skip one day, it’s always pretty difficult for me to go the next.  I don’t want to do anything too strenuous that would ruin my race game tomorrow, but I think an easy two miles should be fine.  We’ll see.  It’s turning out to be a very lazy day here at LVP headquarters!

His Girl Friday

Hello there boys and girls, and happy Friday!  How are you today?  I’m just fine, although I knocked myself a little out of whack when I overslept, and my schedule is a little funky! Oh well, no matter.

Yesterday I woke up at a normal time, and made a normal bowl of fruity oatmeal.

I used:

  • 1/2 cup of oats
  • 1/2 cup water
  • TJ’s Mangolicious blend
  • 1 peach
  • 1 scoop of peanut butter

After a little computer work, I accompanied the boy to the diner where he enjoyed a nice egg sandwich.  Then I hopped on the train and went to visit my poodle.  When I got there, I was greeted by many goodies!  I found the Zevia sodas (and cute T-shirt) I won from a contest Missy hosted…

I tried to warm up slowly, run 3 fast miles, and cool down with one more mile.  It was hard to pace myself without knowing for sure how fast I was going.  When I got home, I was pretty pleased with my statistics; seems like I did pace myself pretty well.

I finished up a baggie of baby carrots while packing up and getting ready… these are the perfect quick snack, except when you have bad allergies.  Sneezing while chomping on carrots makes for a HUGE mess.

I hurried back home just in time to have dinner with Ilana. We heated up leftover cassoulet and steamed some broccoli.  Ilana was finally introduced to the hippie juice, and I think she liked it!

These were so freaking good.  The hit of the night seemed to be Cookies & Cream… it tasted just like the middle of an Oreo!  I can’t wait to dig into the rest of them.  Holy yum, Liz!

I stayed up kind of late, and ended up eating another giant apple before bed.
